In brief: risk assessment of food allergens: food allergen reference doses

Overview

The Risk Assessment of Food Allergens Part 2: Review and Establish Threshold Levels in Foods for the Priority Allergens provides reference doses (RfDs) which are risk-based, derived from global data and meet the criterion of “exposure without appreciable health risk.” These RfDs could be used inform management of unexpected/ unintended allergen presence (UAP) of priority allergens in foods, and enable the full implementation of the Codex Code of Practice on Food Allergen Management for Food Business Operators. The Risk Assessment of Food Allergens Part 5 utilizes the same methodology for additional specific foods which may require declaration in national or regional legislation.
